Are you all about the pumpkin spice life? Then you’re in luck! We have a protein-packed Matrix® Protein Pumpkin Bread to give you the delicious taste of pumpkin spice while providing your body with up to 80g of protein.

- 45g of Light Butter
- 265g of Pumpkin Puree
- 80g (Approx. 23/4 Scoops) of Syntrax’s Matrix® Simply Vanilla Protein
- 115g of All-Purpose Flour
- 1 Egg
- 2 TSP of Pumpkin Pie Spice
- 1/2 TSP of Baking Powder
- Stevia to taste

Preheat the oven to 350 degrees. While the oven is preheating, melt the 45g of light butter in a microwave-safe bowl. After heating, you will set the butter to the side and let it cool to room temperature. You DO NOT want to mix the butter without cooling because it could burn the other ingredients.

Measure out the other ingredients. We recommend using a food scale, a standard measuring cup, and measuring spoons. It is much easier and time efficient than converting each ingredient. If you’re new to using a food scale, be sure to measure your empty container and subtract its weight from the overall weight to get your final ingredient measurement.

Add all of the other ingredients into a mixing bowl and mix well.

Add the cooled melted butter to your mixer and mix.

Pour batter into a small greased loaf or baking pan.

Bake for 30-40 minutes. To check if the bread is done you can stick a toothpick in it. If the toothpick comes out clean, the bread is done.

Optional: Protein icing can be drizzled on top or used for dipping. To make the icing, combine a scoop of Matrix® Simply Vanilla with water until you have an icing consistency. Pumpkin pie spice can also be added to give it extra pumpkin flavor.
